Sweet Summer Peach Melba Oatmeal

With Summer vacay officially having kicked off, I wanted to make my kids a special weekend breakfast and this Sweet Summer Peach Melba Oatmeal was the perfect feast for the eyes … and the tummy!

July marks the beginning of raspberry season here in BC. The taste of fresh BC raspberries takes me back to my childhood summers – swimming in my grandparents pool and picking the fresh, juicy berries straight from their garden to snack on. (Peas from the vine as well… but we’ll save those for a different post!)

The peach/raspberry combo creates a rainbow of bright summer flavour… but it’s nothing new. Peach Melba is a famous dessert that combines peaches and raspberry sauce with vanilla ice cream. It was created by the French chef Auguste Escoffier in the late 1800’s at the Savoy Hotel, London – in honor of the Australian soprano Nellie Melba.

MAKE & ASSEMBLE

Begin by preparing the oatmeal. For this dish I used quick oats made with almond milk. I am a huge fan of the Califia Farms Unsweetened Vanilla. It adds a great vanilla flavour without added sugar. (Mmm so good in coffee!)

Wash raspberries and slice peaches (I used canned) into small chunks.

We are slightly rainbow obsessed over here, so we ‘played with our food’, arranging the fruit in the perfect rainbow arch.

Two generous dollops of whip cream on either end are the finishing touch! We have been loving this coconut whip cream by Gay Lea!

Berry Good Facts

More than just mother nature’s candy, raspberries have some great health benefits!

Raspberries are a source of vitamin C and antioxidants to aid the immune system - fighting against viruses and even some cancers.

It’s also reported that raspberries can aid in fertility, memory, heart health, and eye sight. On their own, they are a low glycemic index snack.
